Thai Eggplant Veggie Beef Curry

Ingredients

Gardein™:

7oz | 200g
Gardein Beef Strips
or
 
7oz | 200g
Gardein™ Beef Cubes

For the Curry:

1tsp | 5ml
Olive oil
½ cup | 120ml
Eggplant, diced
¼ cup | 60ml
Onions, diced
¼ cup | 60ml
Red peppers, sliced
7 fl oz | 200ml Thai red curry sauce
1 cup |100g
Rice

Directions

Cook rice according to directions.

Heat olive oil in frying pan and brown Gardein Veggie beef for about 3 minutes, tossing frequently. Set aside.

Add vegetables to pan and sauté for 3 minutes. Add curry sauce and cook for 2 minutes.

Place rice on plate and cover with the Thai Eggplant Curry.
