Thai Eggplant Veggie Beef Curry
Made with Gardein™ Beef Strips or Cubes*
Serves 2 | Prep time 5 mins | Cook time 10 minutes
Ingredients
Gardein™:
| 7oz | 200g | Gardein Beef Strips |
| or | |
| 7oz | 200g | Gardein™ Beef Cubes |
For the Curry:
| 1tsp | 5ml | Olive oil |
| ½ cup | 120ml | Eggplant, diced |
| ¼ cup | 60ml | Onions, diced |
| ¼ cup | 60ml | Red peppers, sliced |
| 7 fl oz | 200ml | Thai red curry sauce |
| 1 cup |100g | Rice |
Directions
Heat olive oil in frying pan and brown Gardein Veggie beef for about 3 minutes, tossing frequently. Set aside.
Add vegetables to pan and sauté for 3 minutes. Add curry sauce and cook for 2 minutes.
Place rice on plate and cover with the Thai Eggplant Curry.
