Blueberry Chick’n Breast
Made with Gardein™ Chick’n Breasts*
Serves 2 | Prep time 5 mins | Cook time 10 minutes
Ingredients
Gardein™:
| 2 | Gardein™ Veggie Chick’n Breasts |
For the Sauce:
| ½ tsp | 5ml | olive oil |
| 1 | shallot, finely chopped |
| 1 clove | garlic, minced |
| ½ cup | 100g | blueberries (fresh or frozen) |
| ½ cup | 100g | tear-drop tomatoes |
| 2 oz | 60ml | port wine |
| 1 tbsp | 15ml | balsamic vinegar |
| salt and pepper to taste |
Directions
If frozen, allow Gardein™ Chick’n Breast to thaw. Using olive oil grill Gardein™ Chick’n Breast over medium heat for 3 to 4 minutes on each side or until heated through. Remove Gardein™ Chick’n Breasts to a platter, covering to keep warm.
In same pan add onions and garlic and sauté for 2 minutes. Add port and balsamic and increase temperature till liquids boil. Add blueberries and tomatoes and reduce heat to simmer for 5 minutes. Add salt and pepper to taste.
Place Gardein™ Chick’n Breasts on plate and top with blueberry sauce. Serve with your favorite side dish of rice, potatoes or salad.
