Veggie Chick’n with tomato basil bruschetta
Made with Gardein™ Chick’n Filets*

Ingredients
Gardein™:
| 8 | Gardein™ Veggie Chick’n Filets |
Tomato basil bruschetta
| 2 | Roma tomatoes, diced |
| 1 tsp | 5ml | fresh chopped basi |
| ½ tsp | 2.5ml | olive oil |
| ½ tsp | 2.5ml | balsamic vinegar |
| salt and pepper to taste | |
| 8 oz | 225g | penne pasta |
| 2 sprigs | fresh basil for garnish |
Directions
In a pot of boiling water cook penne pasta al dente.
In a bowl blend tomatoes with olive oil, balsamic vinegar and chopped basil.
Add salt and pepper to taste and put aside. Meanwhile, cook Gardein™ Chick’n Filets over medium heat in a non-stick frying pan for 1 minute on each side.
To serve, place cooked pasta on the center plate. Add 4 Gardein™ Chick’n Filets per plate and dress with the brushchetta. Garnish with fresh basil sprig.
