crispy chipotle lime fingers with salsa verde
- 1 pkggardein chipotle lime crispy fingers
- 1 lbstomatillos, husked and rinsed
- 1large onion, quartered
- 5garlic cloves
- 2jalapenos, deseeded
- 1 Tbspvegetable oil
- 2 tspground cumin
- 1 tsp salt
- 1/2 cupcilantro, chopped
- 1large avocado
- 1 Tbspparmesan (or vegan option), finely grated
- 1 pinchblack pepper
Preheat oven to 430F. Place gardein chipotle lime crispy fingers on a parchment-lined baking sheet and bake in oven for 20 to 25 minutes turning once until crispy and golden.
To make salsa verde dipping sauce, pre-heat oven to 450F. On a parchment lined baking sheet, drizze tomatillos, onions, garlic, and jalapenos with oil. Bake for 15 minutes or until partially cooked. Remove from oven.
Place half of the partially cooked tomatillos, onions, jalapenos, and garlic in the food processor and whirl until mostly smooth. Halve avocado, scoop out the flesh of both sides into the processor and add half of the cumin, salt, cilantro, and salt. Pulse until the avocado is pureed into the mixture. Add remaining ingredients into the processor and whirl until almost smooth but still a little chunky. Stir in the juice of 1/2 a lime to create a tart taste. Transfer to a dipping bowl.
To serve, place baked gardein chick’n fingers on a platter. Sprinkle with parmesan and pepper. Serve dipping sauce alongside.
