Fish & Chips Burrito with Creamy Pea Puree and Homemade Tartar Sauce

Gardein® Plant-Based F'sh Filets, fries, and creamy pea purée wrapped in a burrito with homemade tartar sauce for dipping. Recipe developed by the Potash Twins.

Ingredients

  • 1 bag of your favorite frozen french fries
  • 2/3 cup vegan mayonnaise alternative
  • 1/4 cup parsley leaves, finely chopped
  • 1-1/2 tablespoons drained capers, finely chopped
  • 1 tablespoon sweet pickle relish
  • 1/2 teaspoon Dijon mustard
  • 1 lemon, juced and zested
  • 2 tablespoons olive oil
  • 2 cups frozen peas
  • 1/4 cup cream of coconut
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 pkg (10.1 oz each) Gardein® Golden Fishless Filets
  • 4 flour tortillas (12 inch)

Directions

  • Step one

    Begin by preheating the oven to 400°F. Set out french fries in an even layer on a lightly oiled sheet pan and place in the oven for 18 to 20 minutes or until crispy.

  • Step two

    Scoop plant-based mayo substitute into a bowl and stir in the parsley, relish, capers and mustard. Zest enough of the lemon for ½ tsp of zest and add to the bowl with 1 Tbsp of lemon juice. Stir in olive oil and refrigerate until ready to serve.

  • Step three

    Add peas to a saucepan on medium heat, once warmed through, add the cream and season with salt and pepper. Lower the heat and puree the pea mixture with an immersion blender or food processor until the desired thickness is reached. Reserve to bowl until ready to assemble.

  • Step four

    Take fries out of the oven and preheat the oven to 425°F. Place Gardein® Golden Fishless Filets on a non-stick baking sheet for 20 to 24 minutes, flipping halfway until crisp, golden brown and cooked thoroughly to 165°F. Remove from the oven.

  • Step five

    Assembly instructions: do not overstuff. Lay the tortilla flat and spoon the pea puree over the surface of the tortilla and place the french fries on top. Add the Gardein Golden Fishless fillet on top of the fries and roll burrito. Deposit the homemade tartar sauce into a ramekin for dipping, serve and enjoy!
