gardein chick’n pesto penne
- 1 pkggardein chick'n scallopini
- 1 lbpenne pasta
- 2 tblspvegetable oil
- 1/2 cuppesto, store bought
- 1parmesan cheese (vegan option available)
- 8basil leaves, fresh
- 1/4 tsppepper freshly ground
Cook the penne pasta according to package instructions.
Sauté scallopini from frozen in a non stick pan over medium heat for 1 minute on each side. Add 3 Tbsp of water (per 2 pieces) cover for 2 minutes. Uncover, turn and cook for an additional minute.
Remove from pan and set aside on cutting board.
Add penne, and pesto to the hot pan and stir well to evenly distribute the pesto.
Cook 2-3 minutes until pasta is hot through. Remove from heat.
Divide pasta into serving bowls and top with sliced gardein chick’n.
Garnish with parmesan cheese, fresh basil leaves and freshly cracked pepper.
