carrot cranberry wild rice
- 1gardein holiday roast
- 2 cupswild rice blend
- 3 carrots, diced
- 2green onions, thinly sliced
- 1bunchparsley, roughly chopped
- 1 cupdried cranberries
- 1/2 cupsunflower seeds
- 1/4 cupapple cider vinegar
- 2 Tblspolive oil
- 2 Tbsplemon juice
- 1/4 tspcumin
- 1/4 tspsalt
- 1/4 tsppepper
Cook holiday roast according to packaging instructions.
Meanwhile, cook rice according to packaging instructions.
When rice is cooked, place carrots, green onion, parsley, cranberries, and sunflower seeds in large bowl. Mix in cooked rice.
In small bowl whisk together vinegar, oil, lemon, cumin, salt, and pepper.
Pour cider vinegar mixture over rice and mix well.
Serve with hot, cooked gardein holiday roast.
