  • 12 pieceslasagna noodles (oven ready)
  • 24 ozcottage cheese (or vegan option)
  • 1 baggardein beefless ground
  • 3 cupsmarinara sauce
  • 1 egg (or vegan option)
  • 1 tsporegano
  • 1 tspbasil
  • 2 cupsgrated mozarella cheese (or vegan option)

Preheat oven to 375º F. In a skillet, heat up 2 cups of the marinara sauce until simmering, then add frozen Gardein beefless. Add the remaining cup of sauce and let simmer for about 3 minutes.

Meanwhile, in a medium size bowl, add cottage cheese (or vegan option), egg (or vegan option), oregano, basil, and about 1/4 cup of mozzarella (or vegan option) and stir together.

To assemble: In a 13×9 pan, spread a thin layer of the sauce mix on the bottom of the pan, then lay 4 noodles across, then a layer of cottage cheese mix, and sauce mix. Repeat this twice.

On the final layer just add the remaining sauce mix (there wont be too much left, just a thin layer. Then top with the remaining layer of cheese. I also like to add a little more oregano and basil to the top.

Cover with foil and cook in the oven for about 25 minutes. Finish 5-10 minutes un-covered. And that’s it serve and enjoy this meatless meal!

    I love this recipe. I did alter it a little by reducing the marinara by 3/4 cup & adding a cup of crushed tomatoes, a sprinkle of fennel seeds & Romano cheese…we love our Romano cheese. Then a light sprinkle of Parmesan on top. This is now hubby’s favorite & he’s *not* vegetarian! What an endorsement!
