scallopini with fruit salsa
- 1 cupstrawberries diced 1/4"
- 1/4 cupavocado diced
- 2 tblspred onion, finely chopped
- 2 tblspfresh cilantro, chopped
- 1 tsplime zest
- 2 tblsplime juice
- 2 tspjalapeño pepper, seeded and finely chopped
- 1/2 tspagave or sugar
- 1 pkgchick'n scallopini
For the strawberry avocado salsa:
Combine all ingredients except chick’n in a medium sized bowl and toss gently. set aside.
For the chick’n:
Sauté scallopini from frozen in a non stick pan over medium heat for 1 minute on each side. Add 3 Tbsp of water (per 2 pieces) cover for 2 minutes. Uncover, turn and cook for an additional minute.
Transfer scallopini to a serving plate and garnish with strawberry avocado salsa.
