scallopini with fruit salsa

  • 1 cupstrawberries diced 1/4"
  • 1/4 cupavocado diced
  • 2 tblspred onion, finely chopped
  • 2 tblspfresh cilantro, chopped
  • 1 tsplime zest
  • 2 tblsplime juice
  • 2 tspjalapeño pepper, seeded and finely chopped
  • 1/2 tspagave or sugar
  • 1 pkgchick'n scallopini

scallopini with fruit salsa


For the strawberry avocado salsa:
Combine all ingredients except chick’n in a medium sized bowl and toss gently. set aside.

For the chick’n:
Sauté scallopini from frozen in a non stick pan over medium heat for 1 minute on each side. Add 3 Tbsp of water (per 2 pieces) cover for 2 minutes. Uncover, turn and cook for an additional minute.

Transfer scallopini to a serving plate and garnish with strawberry avocado salsa.

    This recipe sounds good, but I think it would be better if you used papaya or mango instead of strawberries. Those two fruits go better with fresh cilantro and avocado. I LOVE your products, and since I’m just a fledgling vegetarian, Gardein helps me avoid the usual blues a veggie-novice experiences when adopting a new diet/lifestyle!
