sweet potato mash

  • 5 large sweet potatoes
  • 4 Tbsp maple syrup
  • 2 tsp vanilla extract
  • 3/4 tspcinnamon
  • to taste salt

candied pecan topping - optional

  • 2 cups pecans
  • 4 Tbsp butter (or vegan option)
  • 4 Tbspbrown sugar

crumble topping - optional

  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup pecans, raw
  • 1/2 tspsea salt
  • 2 Tbspbutter (or vegan option)

Preheat oven to 400º F.

Pierce sweet potatoes several times with a fork, put on a baking sheet and bake until tender (about 1 hour to 1 1/2 hours.
Let potatoes cool for a bit and then remove skin. Put potatoes in a bowl and using a hand mixer, mix at medium speed. Add maple syrup, vanilla extract, and cinnamon and mix until combined. Add salt to taste. Top with candied pecans or crumble topping and serve!

Candied Pecans:
In a saucepan, melt butter (or vegan option) or medium heat. Add pecans and toss to coat.
Add brown sugar and stir until carmelized.
Spread on wax paper on a cookie sheet and refrigerate to cool.


Crumble Topping:
Pulse the oats in a food processor for about 15-20 seconds until they are slightly powdery. Toss the oats in a small bowl with the sugar, pecans and salt. Crumble in the butter and mix until it resembles a coarse meal. Sprinkle evenly over the filling.
